Ingredients:
- 3 medium beets, peeled and cubed
- 2 tbsp olive oil
- 2 oranges, peeled and sliced
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- Mixed greens
- Balsamic vinaigrette
Instructions:
- Preheat the oven to 400°F. Toss beet cubes with olive oil, salt, and pepper, then roast for 30 minutes or until tender.
- Arrange mixed greens on a plate. Top with roasted beets, orange slices, goat cheese, and walnuts.
