Ingredients:

  • 3 medium beets, peeled and cubed
  • 2 tbsp olive oil
  • 2 oranges, peeled and sliced
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • Mixed greens
  • Balsamic vinaigrette

Instructions:

  1. Preheat the oven to 400°F. Toss beet cubes with olive oil, salt, and pepper, then roast for 30 minutes or until tender.
  2. Arrange mixed greens on a plate. Top with roasted beets, orange slices, goat cheese, and walnuts.
