Ingredients:
- 1 (5-pound) prime rib roast
- 4 garlic cloves, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon olive oil
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
Instructions:
- Preheat oven to 450°F (230°C).
- In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the garlic herb mixture all over the roast.
- Place the roast on a rack in a roasting pan and cook for 20 minutes. Reduce the heat to 325°F (165°C) and cook for 1.5–2 hours or until the internal temperature reaches 120°F (49°C) for medium-rare.
- Let the roast rest for 15 minutes before slicing.
