Celebrate Christmas Eve with a succulent Roasted Garlic and Herb Prime Rib. This tender and flavorful roast is infused with a garlic and herb crust, making it the perfect centerpiece for your festive table.

Ingredients:

  • 1 (5-pound) prime rib roast
  • 4 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper

Instructions:

  1. Preheat oven to 450°F (230°C).
  2. In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Rub the garlic herb mixture all over the roast.
  4. Place the roast on a rack in a roasting pan and cook for 20 minutes. Reduce the heat to 325°F (165°C) and cook for 1.5–2 hours or until the internal temperature reaches 120°F (49°C) for medium-rare.
  5. Let the roast rest for 15 minutes before slicing.
