Salmon en Papillote, or salmon in parchment, is a light and elegant dish. The salmon steams in its own juices along with fresh herbs, lemon, and vegetables, locking in flavor and moisture with minimal cleanup.
Ingredients:
- 2 salmon fillets
- 1 zucchini, julienned
- 1 carrot, julienned
- 1 lemon, sliced
- 2 sprigs dill
- Salt and pepper to taste
- 1 tbsp olive oil
- Parchment paper
Instructions:
- Preheat oven to 400°F (200°C).
- Cut two large parchment paper hearts.
- Place vegetables on one half of each parchment.
- Top with salmon, lemon slices, dill, salt, pepper, and oil.
- Fold parchment over, crimp edges to seal.
- Bake for 15 minutes. Open carefully to release steam.


Suggested Pairing:
Enjoy with a light Sauvignon Blanc or chilled Rosé. Add a side of herbed couscous for a complete, refreshing dinner.
