Salmon en Papillote, or salmon in parchment, is a light and elegant dish. The salmon steams in its own juices along with fresh herbs, lemon, and vegetables, locking in flavor and moisture with minimal cleanup.

Ingredients:

  • 2 salmon fillets
  • 1 zucchini, julienned
  • 1 carrot, julienned
  • 1 lemon, sliced
  • 2 sprigs dill
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Parchment paper
     

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Cut two large parchment paper hearts.
  3. Place vegetables on one half of each parchment.
  4. Top with salmon, lemon slices, dill, salt, pepper, and oil.
  5. Fold parchment over, crimp edges to seal.
  6. Bake for 15 minutes. Open carefully to release steam.

Suggested Pairing:

Enjoy with a light Sauvignon Blanc or chilled Rosé. Add a side of herbed couscous for a complete, refreshing dinner.
