This Danish-inspired open-faced sandwich features cold shrimp, creamy dill mayo, and crisp lettuce on rye bread. It’s light, elegant, and perfect for a warm summer lunch or dinner.

Ingredients:

  • 4 slices rye or pumpernickel bread
  • 1 cup cooked cold shrimp (peeled)
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1 tsp chopped fresh dill
  • Butter lettuce leaves
  • Sliced cucumber, for garnish
  • Salt and pepper

Instructions:

  1. Mix mayo, lemon juice, dill, salt, and pepper in a bowl.
  2. Toast bread lightly if desired.
  3. Layer lettuce on bread, top with shrimp and a dollop of dill mayo.
  4. Garnish with cucumber slices and extra dill.
