This Danish-inspired open-faced sandwich features cold shrimp, creamy dill mayo, and crisp lettuce on rye bread. It’s light, elegant, and perfect for a warm summer lunch or dinner.
Ingredients:
- 4 slices rye or pumpernickel bread
 - 1 cup cooked cold shrimp (peeled)
 - 2 tbsp mayonnaise
 - 1 tsp lemon juice
 - 1 tsp chopped fresh dill
 - Butter lettuce leaves
 - Sliced cucumber, for garnish
 - Salt and pepper
 
Instructions:
- Mix mayo, lemon juice, dill, salt, and pepper in a bowl.
 - Toast bread lightly if desired.
 - Layer lettuce on bread, top with shrimp and a dollop of dill mayo.
 - Garnish with cucumber slices and extra dill.

Pair with cold potato salad and a glass of chilled Aquavit or sparkling elderflower soda.
