A lighter twist on the classic comfort dish, this Shepherd’s Pie incorporates spring vegetables for a fresh and hearty dinner.
Ingredients:
- 1 lb ground lamb or beef
- 1 cup diced carrots
- 1 cup peas
- 1 cup corn
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup beef or vegetable broth
- 4 cups mashed potatoes (prepared in advance)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F. Heat olive oil in a skillet over medium heat. Cook ground lamb or beef until browned.
- Add carrots, peas, corn, and garlic to the skillet. Cook for 5 minutes. Stir in tomato paste and broth, then simmer for 10 minutes.
- Transfer the meat mixture to a baking dish. Spread mashed potatoes evenly on top.
- Bake for 20 minutes or until the top is golden and bubbly.

Enjoy with a side of buttered rolls and a glass of red wine like Merlot or Cabernet Sauvignon.
