A lighter twist on the classic comfort dish, this Shepherd’s Pie incorporates spring vegetables for a fresh and hearty dinner.

Ingredients:

  • 1 lb ground lamb or beef
  • 1 cup diced carrots
  • 1 cup peas
  • 1 cup corn
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 4 cups mashed potatoes (prepared in advance)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F. Heat olive oil in a skillet over medium heat. Cook ground lamb or beef until browned.
  2. Add carrots, peas, corn, and garlic to the skillet. Cook for 5 minutes. Stir in tomato paste and broth, then simmer for 10 minutes.
  3. Transfer the meat mixture to a baking dish. Spread mashed potatoes evenly on top.
  4. Bake for 20 minutes or until the top is golden and bubbly.
