Cool down with Spanish Gazpacho, a chilled tomato-based soup that bursts with fresh summer vegetables. This no-cook dish is hydrating, healthy, and full of Mediterranean flavor.
Ingredients:
- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1/2 red onion, chopped
- 2 garlic cloves
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- Salt and pepper, to taste
- 1 cup cold water
Instructions:
- Add all ingredients to a blender and blend until smooth.
- Chill for at least 1 hour before serving.
- Adjust seasoning as needed before serving.


Suggested Pairing:
Serve with crusty bread and a side of marinated olives. Pair with a chilled glass of dry rosé or sparkling water infused with cucumber and mint.
