Bring coastal Spain to your kitchen with this vibrant Seafood Paella. Basmati or traditional paella rice is cooked with saffron, garlic, tomatoes, and mixed seafood for a festive and flavor-packed dish.
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tomato, chopped
- 1 1/2 cups paella rice or short-grain rice
- 3 cups chicken or seafood broth
- 1/2 tsp saffron threads
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb mussels, scrubbed
- 1/2 cup peas
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- Lemon wedges for serving
Instructions:
- Heat olive oil in a wide skillet. Sauté onion and garlic until soft.
- Add tomato, paprika, and rice. Stir for 1 minute.
- Pour in broth and saffron. Bring to a boil, then simmer uncovered.
- After 10 minutes, add shrimp, mussels, and peas.
- Cook until seafood is done and rice is tender. Avoid stirring.
- Remove from heat and rest for 5 minutes.


Suggested Pairing:
Serve with a chilled glass of Spanish Albariño or sangria, and a side of garlic aioli and crusty bread.
