Bring coastal Spain to your kitchen with this vibrant Seafood Paella. Basmati or traditional paella rice is cooked with saffron, garlic, tomatoes, and mixed seafood for a festive and flavor-packed dish.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tomato, chopped
  • 1 1/2 cups paella rice or short-grain rice
  • 3 cups chicken or seafood broth
  • 1/2 tsp saffron threads
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb mussels, scrubbed
  • 1/2 cup peas
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Lemon wedges for serving

Instructions:

  1. Heat olive oil in a wide skillet. Sauté onion and garlic until soft.
  2. Add tomato, paprika, and rice. Stir for 1 minute.
  3. Pour in broth and saffron. Bring to a boil, then simmer uncovered.
  4. After 10 minutes, add shrimp, mussels, and peas.
  5. Cook until seafood is done and rice is tender. Avoid stirring.
  6. Remove from heat and rest for 5 minutes.
