Strawberry Basil Shortcakes put a fresh, herbaceous spin on the classic dessert. Sweet strawberries are macerated with basil and layered with fluffy biscuits and whipped cream for a dessert that screams spring.

Ingredients:

  • 2 cups sliced fresh strawberries
  • 1 tbsp chopped fresh basil
  • 2 tbsp sugar
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 2/3 cup buttermilk
  • 1 cup whipped cream

Instructions:

  1. Mix strawberries, basil, and sugar in a bowl. Let sit 20 minutes.
  2. In a separate bowl, combine flour, baking powder, and salt. Cut in butter until crumbly.
  3. Stir in buttermilk to form a soft dough. Drop spoonfuls onto a baking sheet.
  4. Bake at 400°F for 15–20 minutes or until golden. Let cool.
  5. Split biscuits, layer with strawberries and whipped cream, and serve.
