Strawberry Basil Shortcakes put a fresh, herbaceous spin on the classic dessert. Sweet strawberries are macerated with basil and layered with fluffy biscuits and whipped cream for a dessert that screams spring.
Ingredients:
- 2 cups sliced fresh strawberries
- 1 tbsp chopped fresh basil
- 2 tbsp sugar
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup cold butter, cubed
- 2/3 cup buttermilk
- 1 cup whipped cream
Instructions:
- Mix strawberries, basil, and sugar in a bowl. Let sit 20 minutes.
- In a separate bowl, combine flour, baking powder, and salt. Cut in butter until crumbly.
- Stir in buttermilk to form a soft dough. Drop spoonfuls onto a baking sheet.
- Bake at 400°F for 15–20 minutes or until golden. Let cool.
- Split biscuits, layer with strawberries and whipped cream, and serve.
