Light, tender, and wholesome, Swedish oatmeal pancakes bring together oats and eggs for a nutritious yet comforting breakfast treat.
Ingredients:
- 1 cup rolled oats
- 1 cup milk
- 2 eggs
- 1/2 cup flour
- 1 tbsp sugar
- 1/4 tsp salt
- Butter for frying
Instructions:
- Soak oats in milk for 5–10 minutes.
- Stir in eggs, flour, sugar, and salt to form a batter.
- Heat butter in a skillet and pour small amounts of batter to form thin pancakes.
- Cook until golden on both sides.


Suggested Pairing:
Top with lingonberry jam and serve with a cup of Swedish coffee or warm spiced apple cider.
