These crispy golden fritters are packed with shredded zucchini and sweet corn, making them a fun and satisfying spring dinner. Dip them in a lemony yogurt sauce for a fresh finish.
Ingredients:
- 1 zucchini, shredded and squeezed dry
- 1 cup corn kernels (fresh or frozen)
- 1 egg
- 1/4 cup flour
- 1/4 cup grated Parmesan
- 1 green onion, chopped
- Salt and pepper to taste
- Oil for frying
Herbed Yogurt Sauce:
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp chopped dill or parsley
Instructions:
- In a bowl, combine fritter ingredients and mix well.
- Heat oil in a skillet. Drop batter in spoonfuls and flatten slightly. Cook until golden, 3–4 minutes per side.
- Mix sauce ingredients together.
- Serve fritters with a side of herbed yogurt.

Serve with a crisp cucumber salad and a cold glass of white sangria or lemonade.
