These crispy golden fritters are packed with shredded zucchini and sweet corn, making them a fun and satisfying spring dinner. Dip them in a lemony yogurt sauce for a fresh finish.

Ingredients:

  • 1 zucchini, shredded and squeezed dry
  • 1 cup corn kernels (fresh or frozen)
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup grated Parmesan
  • 1 green onion, chopped
  • Salt and pepper to taste
  • Oil for frying

Herbed Yogurt Sauce:

  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp chopped dill or parsley

Instructions:

  1. In a bowl, combine fritter ingredients and mix well.
  2. Heat oil in a skillet. Drop batter in spoonfuls and flatten slightly. Cook until golden, 3–4 minutes per side.
  3. Mix sauce ingredients together.
  4. Serve fritters with a side of herbed yogurt.
