Take your taste buds on a trip with Thai Peanut Noodles. This dish combines rice noodles with a creamy peanut sauce and crunchy vegetables for a satisfying and quick dinner.

Ingredients:

  • 8 oz rice noodles
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1/4 cup chopped peanuts (for garnish)
  • Fresh cilantro (for garnish)

Instructions:

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, lime juice, honey, and garlic. Add a splash of warm water if needed for a smooth consistency.
  3. Heat a large skillet over medium heat. Sauté carrots and bell peppers until slightly softened, about 3-4 minutes.
  4. Add cooked noodles and peanut sauce to the skillet. Toss to coat evenly.
  5. Garnish with chopped peanuts and cilantro before serving.
