Take your taste buds on a trip with Thai Peanut Noodles. This dish combines rice noodles with a creamy peanut sauce and crunchy vegetables for a satisfying and quick dinner.
Ingredients:
- 8 oz rice noodles
 - 1/4 cup peanut butter
 - 2 tbsp soy sauce
 - 1 tbsp sesame oil
 - 1 tbsp lime juice
 - 1 tsp honey
 - 1 clove garlic, minced
 - 1 cup shredded carrots
 - 1 cup sliced bell peppers
 - 1/4 cup chopped peanuts (for garnish)
 - Fresh cilantro (for garnish)
 
Instructions:
- Cook rice noodles according to package instructions. Drain and set aside.
 - In a bowl, whisk together peanut butter, soy sauce, sesame oil, lime juice, honey, and garlic. Add a splash of warm water if needed for a smooth consistency.
 - Heat a large skillet over medium heat. Sauté carrots and bell peppers until slightly softened, about 3-4 minutes.
 - Add cooked noodles and peanut sauce to the skillet. Toss to coat evenly.
 - Garnish with chopped peanuts and cilantro before serving.
