Light yet hearty, this tofu stir-fry is an excellent way to start the day energized and full of plant-based goodness.

Ingredients:

  • 1 block firm tofu, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp minced garlic
  • ½ cup bell peppers, sliced
  • ½ cup zucchini, sliced
  • 1 tbsp cooking oil
  • 1 tsp sesame seeds

Instructions:

  1. Pat tofu dry and slice into bite-sized rectangles.
  2. Heat oil in a pan and pan-fry tofu until golden on both sides. Remove and set aside.
  3. In the same pan, stir-fry garlic, bell peppers, and zucchini for 3–4 minutes.
  4. Add tofu back in, then season with soy sauce and sesame oil.
  5. Toss gently and sprinkle sesame seeds on top.
