Light yet hearty, this tofu stir-fry is an excellent way to start the day energized and full of plant-based goodness.
Ingredients:
- 1 block firm tofu, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp minced garlic
- ½ cup bell peppers, sliced
- ½ cup zucchini, sliced
- 1 tbsp cooking oil
- 1 tsp sesame seeds
Instructions:
- Pat tofu dry and slice into bite-sized rectangles.
- Heat oil in a pan and pan-fry tofu until golden on both sides. Remove and set aside.
- In the same pan, stir-fry garlic, bell peppers, and zucchini for 3–4 minutes.
- Add tofu back in, then season with soy sauce and sesame oil.
- Toss gently and sprinkle sesame seeds on top.


Suggested Pairing:
Serve over warm rice and pair with kimchi for a complete Korean-style breakfast.
