Start your day with a hearty Vegetable Breakfast Burrito. This wrap is packed with scrambled eggs, sautéed veggies, and a sprinkle of cheese, all wrapped in a warm tortilla.

Ingredients:

  • 4 large eggs
  • 1 tablespoon milk
  • 1 tablespoon olive oil
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • ½ cup spinach
  • 2 large flour tortillas
  • ½ cup shredded cheese
  • Optional: salsa, avocado, or sour cream for topping

Instructions:

  1. In a bowl, whisk together eggs and milk. Season with salt and pepper.
  2. Heat olive oil in a skillet over medium heat, sauté bell peppers and onions until soft. Add spinach and cook until wilted.
  3. Push the veggies to the side of the skillet and scramble the eggs in the same pan until just set.
  4. Place a tortilla on a flat surface, layer the scrambled eggs, veggies, and cheese, and wrap tightly.
  5. Warm the burrito in a skillet or microwave before serving.
