A colorful and healthy option, Vegetable Pasta Primavera is loaded with fresh veggies and tossed in a light garlic butter sauce.
Ingredients:
- 1 lb pasta (penne or farfalle)
- 1 cup cherry tomatoes, halved
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
- Cook pasta according to package instructions and set aside.
- In a large pan, heat olive oil and sauté garlic.
- Add vegetables and cook until tender.
- Toss with pasta
- and Parmesan cheese. Season with salt and pepper.
Suggested Pairing:
Serve with garlic bread and a light white wine for a complete meal.
