A colorful and healthy option, Vegetable Pasta Primavera is loaded with fresh veggies and tossed in a light garlic butter sauce.

Ingredients:

  • 1 lb pasta (penne or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions:

  1. Cook pasta according to package instructions and set aside.
  2. In a large pan, heat olive oil and sauté garlic.
  3. Add vegetables and cook until tender.
  4. Toss with pasta
  5. and Parmesan cheese. Season with salt and pepper.
