This Vegetarian Mushroom Stroganoff is a creamy, hearty, and meat-free take on the classic dish, featuring earthy mushrooms and a luscious sauce.
Ingredients:
- 12 oz egg noodles or fettuccine
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cups sliced cremini or button mushrooms
- 1 tsp paprika
- 1 tbsp soy sauce
- 1 cup vegetable broth
- 1/2 cup sour cream or plain Greek yogurt
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook noodles according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until softened, about 5 minutes.
- Add mushrooms and cook until browned and tender, about 7 minutes. Stir in paprika and soy sauce.
- Pour in vegetable broth and bring to a simmer. Cook for 5 minutes to reduce slightly.
- Stir in sour cream, season with salt and pepper, and mix until the sauce is creamy. Add cooked noodles and toss to coat.
- Garnish with fresh parsley and serve immediately.
