This Vegetarian Mushroom Stroganoff is a creamy, hearty, and meat-free take on the classic dish, featuring earthy mushrooms and a luscious sauce.

Ingredients:

  • 12 oz egg noodles or fettuccine
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cups sliced cremini or button mushrooms
  • 1 tsp paprika
  • 1 tbsp soy sauce
  • 1 cup vegetable broth
  • 1/2 cup sour cream or plain Greek yogurt
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until softened, about 5 minutes.
  3. Add mushrooms and cook until browned and tender, about 7 minutes. Stir in paprika and soy sauce.
  4. Pour in vegetable broth and bring to a simmer. Cook for 5 minutes to reduce slightly.
  5. Stir in sour cream, season with salt and pepper, and mix until the sauce is creamy. Add cooked noodles and toss to coat.
  6. Garnish with fresh parsley and serve immediately.
