Nutty and aromatic, Wild Rice Pilaf is a hearty and healthy side dish.

Ingredients:

  • 1 cup wild rice
  • 2 cups chicken or vegetable broth
  • 1 small onion, diced
  • 1/2 cup mushrooms, diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a saucepan. Sauté onion and mushrooms until soft.
  2. Add rice and broth. Bring to a boil, then reduce heat and simmer until rice is tender, about 25 minutes.
  3. Season with salt and pepper before serving.
