Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

Instructions:
- In a small bowl, whisk together all the ingredients for the marinade: soy sauce, pineapple juice, ketchup, brown sugar, minced garlic, grated ginger, vegetable oil, salt, and pepper.
- Place the cubed chicken breast in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, ensuring it is well coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to meld.
- Preheat your grill to medium-high heat or preheat a grill pan on the stove over medium-high heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers, alternating with bell pepper chunks, red onion chunks, and pineapple chunks.
- Brush the grill grates or grill pan with oil to prevent sticking.
- Place the assembled skewers on the grill or grill pan and cook for 4-5 minutes per side, or until the chicken is cooked through and the vegetables are tender and slightly charred.
